Professor Valdez and colleagues published two articles focusing on food access in the Central Valley. These articles, published in Preventing Chronic Disease and the Journal of Nutrition Education and Behavior, identify the factors that constrain healthy food access in rural food deserts, including cost and quality, and weigh in on interventions that may increase fruit and vegetable consumption.
